Ventresca is the most prized part of the tuna, the ultra-tender fatty belly. Rich in omega 3’s, Ventresca is far superior to the traditional lean albacore. Gently poached in estate grown olive oil and terrific eaten as a stand alone, or as a lovely salad accoutrement.
