Blue-Skinned Silkies have been beloved for centuries in Chinese cuisine, but they remain a rare and distinctive breed in the US. This selection comes from a family farm in Upstate New York, delivering the breed's characteristically dense, meaty, and gamey flavor between its eponymous blue skin and bones. Petite, lean, and intense, these birds lend themselves exceptionally well to braising or stewing on the bone, and will yield incredible stock once all the meat has been claimed.

The Chinese name for the Silkie is wu-gu-ji – meaning black-boned. In addition to their unusual coloring, Silkies also have one more toe per foot than most chickens (five, rather than four) and expand their eccentricities all the way to the hens' demeanor. Despite not laying very many eggs themselves, Silkie Hens are known to be such exceptional, nurturing brooders that they are commonly used to hatch and raise eggs for other species.
